About Dornoch Distillery
Dornoch Distillery is one of the most talked-about craft spirits operations in Scotland. Run by brothers Phil and Simon Thompson in a converted Victorian fire station and church hall in the heart of Dornoch, it produces both gin and whisky using traditional techniques. The Thompson brothers have developed a cult following among whisky enthusiasts for their commitment to heritage methods โ older yeast strains, extended fermentations, open-top wooden washbacks โ that produce spirits of remarkable complexity. Their gin is excellent, their whisky releases (though still young) are already commanding premium prices, and the distillery has a genuine sense of mission and personality that sets it apart from corporate operations.
